Breakfast Pita Pizza
Weekend breakfasts should be special. Information technology's as well nice when they don't take much effort to prepare or make much of a mess. This Breakfast Pita Pizza is all of those things. A pita is slathered with a seasoned ricotta, topped with sautéed mushrooms, spinach, and an egg, and drizzled with pesto. I loved how this turned out. The pita was perfectly crispy and the ricotta, egg yolk, and pesto mixed together in the most delightful mode, and the mushrooms added a nice meatiness while the spinach added fresh flavor.
This breakfast is like shooting fish in a barrel to make one at a time, or in larger batches. Y'all tin can also customize information technology with your favorite cheeses and vegetables. If you don't have pita, you could employ naan or focaccia instead.

Ingredients
- ii teaspoons Olive Oil
- 1/iv cup Mushrooms
- i/4 cup Function Skim Ricotta
- a nuance of Table salt and Pepper
- two teaspoons Fresh Lemon Juice
- a small scattering of Spinach
- 1 Pita
- 1 Egg
- 1 teaspoon Pesto
Instructions
- Heat your oven to 350 degrees,and place an oven rack on the 2d lowest position. I sautéed the mushrooms first, yous could skip this step but I thought sautéing them would lend them more flavor. Heat the olive oil over medium heat, add the mushrooms, and season with a chip of common salt and pepper. Sauté for four-5 minutes, until the mushrooms have browned.
- In a minor bowl, mix the ricotta, lemon juice, and a dash of salt and pepper together. Then spread it over the pita.
- Add together the spinach and mushrooms and summit, leaving space in the center of the pita for the egg. Cleft the egg in the center of the pita, and drizzle the pesto over.
- Identify in the oven and let bake for 20 minutes, or until the egg white is fully cooked.
- Slice the pizza and serve information technology right away.
